Bucatini Cacio e Pepe is a classic Roman pasta dish known for its simplicity and bold flavors. It consists of bucatini, a thick pasta with a hollow center, which is coated in a sauce made from Pecorino Romano cheese and freshly cracked black pepper. The dish’s name, “cacio e pepe,” translates to “cheese and pepper” in Roman dialect, highlighting the two key ingredients.

The dish is thought to have originated with shepherds in the Apennine Mountains centuries ago, who relied on its cheap and readily available ingredients. At Rock Island, award winning chef @jakeburkhardt1 shows us the perfect example of how the most basic components can come together to form a rich, comforting dish.

All our pasta is made in house and “fresh” is the key word for all our ingredients! Did you know Chef Jake perfected some of his culinary arts during an externship at Castello di Gabbiano in the Tuscany region of Italy! You will not be disappointed when you try out this dish! Best pasta in Snowmass if not the valley! And it’s no wonder after recently being awarded best Chef in the @aspentimes BestOf community polls!

Saturday, Stevie Lizard plays at 8. The famed @john.borie of Stevie Lizard played in the Junior Wells Chicago Blues Band, touring the world and playing on the Grammy-nominated "Live at Buddy Guy’s Legends." Now as part of a trio, they play classic rock and sweet soul and Chicago Blues for your late night enjoyment.⁠

Why oysters?⁠
Great question. Why have we chosen to celebrate oysters at 8,100 feet above sea level?⁠
⁠
The answer is that seafood is part of our coastal roots. While we are forever grateful for being embraced by the mountain community, our roots are at sea level - the sleepy fishing villages, morning surf sessions and coastal bars. We grew up eating and preparing oysters and want to share that in the Rockies.⁠
⁠
We work with three different oyster farms, one of which is Rappahannock Oyster Company @rroysters, a family business that operates in the tidal waters of Virginia. They grow our Maroon Bell. Their philosophy is that nature's way is the best and they study and leverage the natural rhythms in their cultivation. And as filter feeders, oysters actually filter waterways.⁠

Oysters are an adventure - not unlike skiing and snowboarding. Folklore says they're an aphrodisiac. We're not sure about that, but they certainly make people happy after a day on the hill. ⁠

Owners and brothers Kenny and Chris Burkhardt getting some turns in a couple years ago. They grew up on the beach in New Jersey and wanted to bring a coastal culinary experience to the Rocky Mountains. Together with their cousin, Chef Jake Burkhardt, they made that dream a reality and opened up Rock Island Oyster Bar and Grill in Snowmass Village.
